Lazy Day Chili

I am so sorry for the lack of blogging!  We have been so busy lately getting ready for Christmas and I've been looking for a new job...which I'll tell you is a full time job in itself...exhausting!  I haven't been cooking very much since I've been in a bit of a funk getting frustrated with the job hunt and whatnot.

I also decided to change my blog name to Chelsea's Culinary Indulgence.  I hope you enjoy!

Over the weekend we spent all of Sunday decorating for Christmas and putting up our lights and tree which was a blast.  Due to the gloomy weather I decided it was a perfect day to make my Lazy Day Chilly.  This chili is so easy to make you will love it!



Makes about 4 servings
Ingredients:

1 lb. ground beef
2 large onions, chopped
6 cloves garlic, minced
2 jalapeño peppers, seeded and finely chopped (if you like your chili extra spicy you can throw in some seeds)
2 tablespoons chili powder
2 teaspoons ground cumin
1 large can of stewed tomatoes
3 cans kidney beans, rinsed and drained
Cheddar cheese, sour cream, and chopped red onion for toppings

Directions:

In Dutch oven brown beef over medium heat.  


Add onions, garlic, and peppers and cook about 5 minutes.   

 
Add chili powder, cumin, salt and pepper to taste and cook about 1 minute.  Add canned tomatoes and about 1 cup of water, stir and bring to a boil.   


Reduce heat and simmer, covered, about 10 minutes. Add the beans, stir, and return to a simmer.


Cook about 30 minutes to an hour (the longer the better).  Remove from the heat, pour into bowls, and top with your favorite toppings.
