Irish Nachos

It’s never too early in March to get ready for St. Patrick’s Day!  When I think of Irish Pub food, one of the first things that comes to mind are Irish Nachos.  Thick cut potato wedge fries, topped with lots of Aged Irish cheddar cheese, sour cream, bacon, and green onions.  I want to stress the importance of using Aged Irish cheddar cheese for these nachos!  It has an amazingly sharp, tangy taste with a creamy texture, and it really brings these nachos together.  Using a regular cheddar cheese just wouldn't yield the same results.  Grab yourself an ice cold Guinness and have an Irish themed happy hour at home!


1 bag frozen French Fry Wedges, cooked
Cooked bacon, crumbled
2 cups Aged Irish cheddar cheese, shredded
Sour cream
Green onions, chopped


Preheat broiler.  Spread fries in a large ovenproof dish or pizza stone.  Cover with shredded cheese and crumbled bacon.  Place under broiler until the cheese melts, about 5 minutes.

Remove from the broiler and top with sour cream and green onions.
