Makes about 20 servings
Ingredients:
20 (1-inch) watermelon cubes, seeds removed
20 small to medium mint leaves
8 ounces goat cheese
20 wooden toothpicks
Directions:
Roll goat cheese into 20 (3/4-inch) balls. Top each watermelon with a mint leaf. Place 1 goat cheese ball on top of the mint, and skewer with a wooden pick to secure. Repeat with the remaining ingredients. Serve immediately.

This is the perfect appetizer for a warm day. It goes straight from the serving dish and right into your mouth. I love this recipe and will make it during my next summer get together for a cool appetizer. Your blog, also, is gorgeous. I joined.
So yummy! I love melon and cheese of any sort, and the bite from the goat cheese would be a nice compliment to the sweetness of the melon.

These are adorable, and I love goat cheese. I have had feta and watermelon, but haven't tried goat cheese yet.
Simple, elegant and tasty. It's everything a summertime food should be. I think I'd use basil instead of mint, though.
