Pumpkin Spiced Donuts with Chai Icing #SundaySupper

I don't know about you but I'm ready to break out the pumpkins, breathe in the scent of warm spices, and soak up every bit of Fall! That's why I was ecstatic to participate in this weeks #SundaySupper celebrating All Things Orange! I absolutely love the taste of sweet spiced pumpkin in any fall treat. Typically cookies, muffins, or cupcakes, but I recently bought this nifty thing called a donut pan, and knew I had to try out some pumpkin spiced donuts! And what better way to compliment a perfectly spiced pumpkin donut than to top it off with some Chai icing?


2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1/4 teaspoon ginger
1/2 cup brown sugar
1 cup pumpkin puree
2 eggs
2 tablespoons milk
1/4 cup butter, at room temperature
1 teaspoon vanilla extract

Chai Icing:
 2 cups powdered sugar
3 tablespoons milk
1 tablespoon butter
1 teaspoon vanilla extract
2 chai tea bags


Preheat the oven to 350 degrees. Spray a donut pan with nonstick spray.

In a large bowl, sift together the flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ginger. Set aside.

In another bowl, cream together the brown sugar, butter and pumpkin. Add in the eggs and mix. Then mix in the milk and vanilla. Add the dry ingredients and stir to combine.

Spoon the batter into a ziplock bag or piping bag. Cut off the corner and pipe into the donut pan. Bake about 10 minutes until a toothpick comes out clean. Let rest in the pan for 5 minutes, then remove from the pan and let cool on a wire rack.

Meanwhile, prepare the icing. Melt the butter in a small saucepan and add milk. Steep the chai tea bags in the liquid for 5 minutes, then discard. In a small bowl, mix together the sugar and vanilla and pour in the milk mixture. Mix until a smooth, fairly thick icing forms.

Once the donuts are completely cool, dip them in the icing. Return them to the wire rack to allow the icing to set.

I'm not a very big chai fan, but I'm willing to give anything a try. I suppose I could always leave it out in favor of a plain glaze too. They do look really yummy though, and I might like the chai this way.

I love chai, but don't think I could handle the sweetness of the icing. I'm going to think about how to incorporate the chai flavor into the donut itself ... Yum!
