Spiced Eggnog Donuts dripping with creamy vanilla eggnog glaze!
One of my favorite Holiday flavors is eggnog. There's just something about the spiced, sweet, creamy drink that I just can't get enough of.
This stuff is amazing as is, but when baked inside a spiced cake donut and swirled into a sweet vanilla glaze, it's even more irresistible!
You know what would make these donuts even better? Spiked eggnog...go ahead knock yourself out...it is the Holidays after all!
Makes about 6 Donuts:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon nutmeg
1/2 teaspoons cinnamon
1/2 cup sugar
1 cup eggnog
1/4 cup butter, at room temperature
1 teaspoon vanilla extract
1 1/2 cup powdered sugar
3 tablespoons eggnog
1 teaspoon vanilla
nutmeg for garnish
Preheat the oven to 350 degrees. Spray a donut pan with nonstick spray.
In a large bowl, sift together the flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside.
In another bowl, cream together the sugar and butter. Add in the eggs one at a time and mix. Then mix in the eggnog and vanilla. Add the dry ingredients and stir to combine.
Spoon the batter into a ziplock bag or piping bag. Cut off the corner and pipe into the donut pan. Bake about 10 minutes until a toothpick comes out clean. Let rest in the pan for 5 minutes, then remove from the pan and let cool on a wire rack.
Meanwhile, prepare the glaze. In a small bowl, mix together all of the ingredients until the glaze is smooth and fairly thick.
Once the donuts are completely cool, dip them in the icing. Return them to the wire rack to allow the icing to set.
