{5th Day of Christmas} Peppermint Kiss Cookies

I absolutely love shopping at Target...especially during the Holidays. Why? Because they always have the best selection of cute seasonal things in the baking aisle! Like these super cute and tasty Hershey's Peppermint Kisses. White chocolate kisses with festive red stripes and little bits of real candy cane pieces. Now take those awesome Hershey's Peppermint Kisses that are so good by themselves, and smoosh them into a peppermint sugar cookie rolled in MORE crushed candy canes. I have died and gone to candy cane heaven!

Did I mention how cute they are?!

Makes about 2 dozen cookies

1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon peppermint extract
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
candy canes, crushed in a food processor
24 unwrapped peppermint kisses


In a medium bowl, sift together the flour, baking soda, and salt, set aside. In a stand mixer, cream together the butter and sugars. Beat in the egg and peppermint extract. Gradually add the dry ingredients to the mixer. Cover and chill for one hour.

Preheat the oven to 325 degrees.

Line cookie sheets with parchment paper and set aside. Roll the chilled dough into 1 inch balls, then roll in the crushed candy canes. Place 2 inches apart on a cookie sheet and bake for 10-12 minutes or until golden brown. Remove from the oven and place a kiss in the center of each cookie. Transfer to a wire rack to cool.
