Finding the Right Words

I have been meaning to share this with you all for some time now, but I haven't seemed to find the right words, or the right reasons.

Keeping up with this blog has allowed me to do so much more than share my recipes. It has given me the opportunity to meet so many wonderful people. Sometimes when you feel very alone in whatever you may be going through it is so refreshing to discover that you are not alone, and that there are so many people out there who have been in the same boat. I have been blessed to meet so many strong women through this blog that have encouraged me to share my story, but today I came across a blog post by Wanna Be a Country Cleaver that truly gave me my voice.

One year ago I had what I thought to be the absolute worst day of my life. It was the day that I was diagnosed with Crohn's disease. Unfortunately, I soon found out that there would be worse days to come in suffering with this disease. I have been through so many ups and downs in what has seemed like the longest year of my life, and every day is a constant struggle to scratch the surface of finding remission.

When I came across Megan's post about her brave friend Beka and her struggle to fight this disease, I was given new hope, and a realization that there are so many people out there who battle this disease and who are fighting for a cure. There are 1.4 million people throughout the United States that suffer through this chronic disorder, in which there is no cure, but that doesn't mean that we have lost hope.

Pumpkin Spiced Donuts with Chai Icing #SundaySupper

I don't know about you but I'm ready to break out the pumpkins, breathe in the scent of warm spices, and soak up every bit of Fall! That's why I was ecstatic to participate in this weeks #SundaySupper celebrating All Things Orange! I absolutely love the taste of sweet spiced pumpkin in any fall treat. Typically cookies, muffins, or cupcakes, but I recently bought this nifty thing called a donut pan, and knew I had to try out some pumpkin spiced donuts! And what better way to compliment a perfectly spiced pumpkin donut than to top it off with some Chai icing?


2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1/4 teaspoon ginger
1/2 cup brown sugar
1 cup pumpkin puree
2 eggs
2 tablespoons milk
1/4 cup butter, at room temperature
1 teaspoon vanilla extract

Chai Icing:
 2 cups powdered sugar
3 tablespoons milk
1 tablespoon butter
1 teaspoon vanilla extract
2 chai tea bags


Preheat the oven to 350 degrees. Spray a donut pan with nonstick spray.

In a large bowl, sift together the flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ginger. Set aside.

In another bowl, cream together the brown sugar, butter and pumpkin. Add in the eggs and mix. Then mix in the milk and vanilla. Add the dry ingredients and stir to combine.

Spoon the batter into a ziplock bag or piping bag. Cut off the corner and pipe into the donut pan. Bake about 10 minutes until a toothpick comes out clean. Let rest in the pan for 5 minutes, then remove from the pan and let cool on a wire rack.

Meanwhile, prepare the icing. Melt the butter in a small saucepan and add milk. Steep the chai tea bags in the liquid for 5 minutes, then discard. In a small bowl, mix together the sugar and vanilla and pour in the milk mixture. Mix until a smooth, fairly thick icing forms.

Once the donuts are completely cool, dip them in the icing. Return them to the wire rack to allow the icing to set.
